Salmon and Chive Courgetti Spaghetti
Salmon may not be the most common fish to add to a pasta dish, but adding salmon to a zucchini spaghetti dish creates a flavourful meal with many nutrients. Combining salmon and veggie spaghetti provides high levels of dietary fibre, potassium, protein, and several vitamins.

Instructions
  1. Spiralize courgettes and add to boiling water. Cook for 3 minutes. Drain, but reserve some water in pan. Return spiralized courgettes to pan. Set aside.
  2. Fry shallot with olive oil. Mix in smoked salmon. Add squeeze of lemon juice.
  3. Add soft cheese, smoked salmon, another squeeze of lemon juice to pan with courgette. Heat through.
  4. Add chives and cilantro, then mix.
