Instructions
  1. Preheat oven to 200ºC
  2. Combine ground beef, half of the garlic, egg, cheese, cilantro, seasoning, and panko in a bowl. Add 1/2 cup of water to mixture a little at at time.
  3. Roll mixture into small balls. Press a piece of mozzarella cheese into the center of each meatball, then cover the piece of cheese.
  4. Put 4 tbsp. olive oil in a pan over medium heat. Then fry the meatballs a few at a time on this pan for 2 minutes on each side.
  5. Place meatballs on baking sheet. Bake for 10-12 minutes.
  6. Heat a new pot with ½ cup olive oil over medium heat. Add onion and sauté for 5-10 minutes. Add celery and season.
  7. Add tomatoes and thyme and simmer for about an hour on low heat.
  8. 1/2 of the mixture at a time, add sauce to a food processor until smooth.
  9. Spiralize courgettes to make courgetti spaghetti, then cook for about three minutes.
  10. Combine courgetti spaghetti, tomato sauce, and meatballs.
