  1. In a large pan, heat 1 tbsp. olive oil. Add sliced onions and cook for 10 minutes on high heat, or until onions brown. Then, reduce heat to medium and cook for another 10 minutes. Add salt. Cook for another 10 minutes on medium to low heat.
  2. Remove heat and toss onions in balsamic vinegar.
  3. In a large pan, heat 1 tbsp. olive oil. Add mushrooms and salt. Cook over medium heat for 20 minutes (or less depending on which type of mushroom you use).
  4. Mix onions and spinach with the mushrooms in the pan and heat on low heat for about 5 minutes.
  5. Add cream, milk, Romano cheese, pine nuts and some salt to the pan and continue cooking on medium heat for 5-10 minutes.
  6. Spiralize courgettes to make courgetti spaghetti. Cook for about 3 minutes.
  7. Combine sauce and vegetable pan with courgetti spaghetti.
