Broccoli and Mushroom Courgette Carbonara
Carbonara is a quick and easy pasta sauce to make, but carbonara dishes are usually seen as heavy and filling when made with the traditional eggs, cheese, and bacon. But, by using courgettes as a pasta substitution and adding more vegetables, carbonara can be transformed into a healthier meal.

Instructions
  1. Spiralize courgettes to make courgetti spaghetti, then set aside.
  2. Preheat oven to 200C.
  3. Toss broccoli and mushroom in a large saucepan of olive oil, salt, and pepper. Then, place on baking sheet and roast about 20-30 minutes, or until vegetables caramelize, mixing halfway through.
  4. Cook the bacon in a pan, pour out all but a tablespoon of grease. Add garlic, cook for 30 seconds.
  5. Mix egg, cheese, pepper, and salt in a bowl.
  6. Mix the courgetti spaghetti, egg mixture, broccoli, and mushrooms into the pan with the chicken, adding water if necessary to warm the dish up and soften the pasta.
