Instructions
  1. Spiralize courgettes to make courgetti spaghetti, then set aside.
  2. Preheat oven to 200C.
  3. Toss broccoli and mushroom in a large saucepan of olive oil, salt, and pepper. Then, place on baking sheet and roast about 20-30 minutes, or until vegetables caramelize, mixing halfway through.
  4. Cook the bacon in a pan, pour out all but a tablespoon of grease. Add garlic, cook for 30 seconds.
  5. Mix egg, cheese, pepper, and salt in a bowl.
  6. Mix the courgetti spaghetti, egg mixture, broccoli, and mushrooms into the pan with the chicken, adding water if necessary to warm the dish up and soften the pasta.
