However, this spinach and artichoke zucchini spaghetti is just the opposite. Instructions
  1. Soak walnuts in hot water for at least 20 minutes, but as long as possible.
  2. Cook spinach and cauliflower in a pan with olive oil over medium heat.
  3. Separate and place spinach to the side.
  4. Put cauliflower, walnuts (drained), 1 cup artichoke hearts, ½ cup artichoke liquid, lemon juice, and garlic in a food processor. Process for about 2 minutes.
  5. Spiralize courgettes to make courgetti spaghetti. Cook for about three minutes.
  6. Chop up the rest of the artichoke hearts. Put in a bowl with the mixture from the food processor, courgetti spaghetti, and spinach. Mix together.
