  1. Preheat oven to 150C. Mix pumpkin seeds with melted butter and salt, spread onto baking sheet and cook for 45 minutes. Set seeds aside.
  2. Turn oven heat up to 230C. Mix pumpkin and onion with olive oil and basil. Spread onto baking sheet and cook for 20 minutes.
  3. Spiralize courgettes and add to boiling water. Cook for 3 minutes. Set aside.
  4. Mix cream, vegetable stock, and chives in a pan over medium heat. Cook for 4-5 minutes to thicken sauce.
  5. Add sauce to spiralized courgettes. Mix pumpkin, onion, and pumpkin seeds with courgette pasta.
