Sauce
- 3 Chicken thighs De-boned
- 6 oz Cherry Tomatos Halved
- 1 bunch Chilantro
- 5 cloves garlic Chopped
- 1 tbsp Lemon juice
- 0.25 cup Parmesan cheese
- 0.5 cup olive oil
- 1 tsp Paprika
- 0.5 cup Peacans

Instructions
- Spiralize courgettes to make courgetti spaghetti, then set aside.
- Preheat oven to 425 degrees.
- Toss tomatoes with 1 tbsp olive oil. Then spread tomatoes on baking sheet and place in oven for 10-15 minutes, or until they are soft.
- In food processor/blender, combine cilantro, garlic, lemon juice, parmesan cheese, paprika, pecans, and salt. Add olive oil and blend.
- Cut chicken into bite size chunks, add to large frying pan over medium heat and cook until browned.
- Add sauce and courgetti spaghetti to the frying pan and gently heat for a couple a minutes to warm the dish up and soften the pasta.
