Instructions
  1. Spiralize courgettes to make courgetti spaghetti, then set aside.
  2. Preheat oven to 425 degrees.
  3. Toss tomatoes with 1 tbsp olive oil. Then spread tomatoes on baking sheet and place in oven for 10-15 minutes, or until they are soft.
  4. In food processor/blender, combine cilantro, garlic, lemon juice, parmesan cheese, paprika, pecans, and salt. Add olive oil and blend.
  5. Cut chicken into bite size chunks, add to large frying pan over medium heat and cook until browned.
  6. Add sauce and courgetti spaghetti to the frying pan and gently heat for a couple a minutes to warm the dish up and soften the pasta.
