Instructions
  1. Cook beef over medium heat for 5-7 minutes, then drain.
  2. Spiralize courgettes to make courgetti spaghetti, then cook for about three minutes. Stir in milk and tomato sauce, heat to boil.
  3. Reduce heat to low, cover pot and simmer for 5 minutes. Stir in beans, corn, salsa, and taco seasoning then boil. Reduce heat to low, cover pot and simmer for another 5 minutes.
  4. Remove from heat, then add cheese blend. Let stand for 5 minutes.
  5. Add lettuce and serve.
