Honey & Lemon Chicken Courgetti Spaghetti

Depending on how you make it, chicken can be apart of a heavy or light dish. Made with honey and lemon and combined with courgetti spaghetti, this dish certainly qualifies as a light chicken dish that can be enjoyed on a Spring or Summer day when you’re in the mood for something smaller.
Mix honey, lemon juice, 2 tbsp. olive oil, and lemon pepper seasoning in a bowl. Set aside.
Put 1 tbsp. olive oil in a large pan over medium heat. Add the chicken. Cook over medium heat for about 7 minutes, or until golden brown and almost cooked through.
Turn heat down a bit. Add sauce to pan. Cook for another 5 minutes.
Spiralize courgettes to make courgetti spaghetti. Cook for about 3 minutes.
Slice chicken into 1 inch cubes.
Combine courgetti spaghetti, chicken/sauce, and cucumbers.
