Fajita Courgetti Spaghetti
Because zucchini is not known for its spicy, intense flavor, it can be fun to spice up courgetti spaghetti dishes a little bit. This fajita courgetti spaghetti recipe puts a new twist on zucchini noodles.

  1. Cut chicken into 1 cm. cubes. Season with 2 tbsp. taco seasoning.
  2. Put 1 tbsp. of olive oil in a pan over medium heat. Add chicken and cook both sides until chicken is brown and cooked through.
  3. Remove chicken from pan.
  4. Put 1 tbsp. of olive oil in the same pan over medium heat. Add onions, red bell pepper, 2 tbsp. taco seasoning, and red pepper flakes to the pan. Cook until onions and bell pepper is browned.
  5. Remove vegetables from pan.
  6. Spiralize courgettes to make courgetti spaghetti.
  7. In the same pan, put chicken broth, heavy cream, and tomatoes. Then, add courgetti spaghetti to pan. Add salt and pepper as you wish. Stir contents of pan.
  8. Cover pan and let simmer for about 6 minutes.
  9. Add chicken and onion/red bell pepper mixture to pan and stir. Cook for about 2 minutes.
