Courgetti Spaghetti with Swedish Meatballs
Though spaghetti and meatballs is a delicious dish, it can get boring after awhile. This classic dish with a small twist makes the traditional spaghetti and meatballs exciting again, and is way healthier than the regular dish.

Ingredients

  1. In a bowl, add panko crumbs and milk. Let sit for 10 minutes.
  2. In a pan over medium heat, add 1 tbsp. olive oil and 1 tbsp. butter.
  3. Add onions to the pan and sauté for 5 minutes. Add garlic and basil and continue sautéing for 1-2 minutes.
  4. In a bowl, combine ground beef, onions, garlic, and basil.
  5. Add egg to bowl and stir until egg is mixed in well.
  6. Add mixture of panko crumbs and milk to the bowl.
  7. Make meatballs using hands, or scoop
  8. In a pan over medium heat, cook meatballs a few at a time so they are brown on all sides.
  9. Place meatballs on baking sheet and put in oven at about 100ºC to keep warm.
  10. Add 4 tbsp. butter to a pan over medium heat. Add flour and cook for about 2 minutes.
  11. Stir in beef broth and continue cooking.
  12. Stir in cream and Dijon mustard. Continue cooking until sauce thickens.
  13. Add meatballs to pan, cover and put over low heat for about 10 minutes.
  14. Spiralize courgettes to make courgetti spaghetti and cook for about 3 minutes.
  15. Combine meatballs/sauce and courgetti spaghetti.
