Instructions
  1. Add a good lug of olive oil to a large saucepan over a medium heat, and gently fry your pancetta until golden and crisp, then reduce the heat slightly and add your onion, courgettes and garlic. Next add the dried rosemary, give everything a good stir and then fry for around 8 minutes until the vegetables have softened.
  2. Next, increase the heat slightly, add the mince and stir until the meat is browned all over.
  3. Stir in your tins of chopped tomatoes.. Add your remaining herbs, tomato puree and stock cube.
  4. Give everything a stir with a wooden spoon and bring to a gentle simmer. Reduce the heat to low, put the lid on and leave it simmer away for about an hour and 20 minutes until the flavours develop.
  5. Just as the sauce is nearly ready, Add the parmesan and season to taste. Meanwhile spiralize your courgettes, next heat a tsp of butter to a large frying pan. Add the courgettes to the pan and move around until softened, roughly 3 minutes. Serve up the courgette spaghetti into pasta bowls, and then top with 3 large ladles of the bolognese.
  6. Serve with a little grated parmesan
